Banoffee Celebration Cake

 
make 3 x 6inch cake tins / 2 x 8inch loaf tins
Prep time 20 min - cook time 40 mins
 
Ingredients
6 x Medium overripe Bananas or freeze to blacken
170g x Unsalted butter (Room Temp)
175g x Soft Brown Sugar
175g x Unrefined gold Sugar
2 x eggs
8 x Teaspoons Baking powder
2 tsp Sea Salt
350g flour
 
Method
1. Preheat Oven to 180c / 350f / Gas 4 and grease tins lightly with baking paper and oil/butter
2. Puree bananas, cream butter and sugar together until light/pale and fluffy. then mix in the eggs,
baking powder, puree and salt.
3. Spoon into desired tins and and bake in the preheated oven for 40-45min, turn onto wire rack
and allow to cool at room temperature
 
Butter Cream
500g x butter (soft at room Temp)
1 kg x Icing sugar (plain)
1 x tbsp vanilla extract or bean paste
 
Method
whip butter in kitchen or food processor until light and pale, mix, extract, icing sugar in with spatular
until well incorporated so not to blow everywhere when switched back on. whipped again for 1
minute until fully mixed.

Maroons
 
Salted Caramel Sauce (for Serving)
250g x Brown Sugar
250ml x Double Cream
1 x tsp sea salt
 
Method
1. Put the sugar in a pan, heart to melt and make a dark caramel (caution) about 190c in temp, at
the same time heat the cream in another pan to a simmer.
2. Whisk to hot cream into the caramel- it will spit until well incorporated. Pass through a sieve
and Serve.
